Strawberry Fudge Cupcakes
This week's cupcake is- a Strawberry cupcake filled with a fudge filling, a butter cream frosting and topped with a fondant bootie.
I made these for a baby shower and they were a big hit. The flavors really rolled with each other. Definitely a keeper!

This was a cute type of cupcake. STILL yummy! But cute...

They were perfect for a party.

For this cupcake there was no real recipe as I used a cake mix. So I put the "recipes" below.

-Strawberry Fudge Cupcake-
Cupcakes:
- Two cake mixes
Line a cupcake tin with cupcake liners and preheat oven to 350*.
Make the cake mix according to the box. Then fill cupcake tins 3/4 way full. Bake about 12 minutes or until a tooth pick comes out with a few crumbs on it.
Let cool completely.
When cool, cut a one to one and a half inch whole in the middle of the cupcakes.
Filling:
- 2 cups chocolate chips
- 1 (fourteen ounce) can condensed milk.
- 1 teaspoon vanilla
Put chocolate chips and condensed milk in a microwave safe bowl and microwave (stirring every minute) until chocolate chips are melted and smooth. Then add vanilla and mix well. Spoon right into (while warm) the cupcakes. Fill to the top of cupcakes.
Frosting:
- 1/2 cup solid vegetable shortening
- 1/2 cup (1 stick) butter or margarine softened
- 1 teaspoon clear vanilla extract
- 4 cups sifted confectioners' sugar (approximately 1 lb.)
- 2 tablespoons milk
Or store in a air tight container in the fridge. Let stand at room temperature before using. As frosting will be really hard when cold.
