Orange-Cream Cheese Chocolate Chip cookies.
1/2 cup shortening
3 ounces cream cheese, softened
1/2 cup sugar
1 large egg, beaten
1 teaspoon vanilla extra
1 teaspoon grated orange zest
1 cup all-purpose flour
1/2 teaspoon salt
1 cup semisweet chocolate chips
Preheat oven to 350. Line a baking sheet with parchment paper.
Combine the first four ingredients in a large bowl and, using an electric mixer, (Or a spoon) beat on low speed until smooth and creamy. Add the vanilla and orange zest and beat well. In a small bowl, combine the flour and the salt. Add to the creamed mixture and beat until well blended.
Stir in the chocolate chips.
Drop the dough by heaping teaspoonfuls onto the parchment-lined baking sheets.
Bake the cookies for 12 to 15 minutes, or until the edges are just beginning to brown. Remove from the oven and cool on wire racks.
Note: If you add one and a half teaspoons orange juice concentrate is makes it even better. But if you add to much it will make the cookies go flat.
