For the past couple weeks I have been going on a sugar fast, and was planning on going through the month. But as Easter has been getting closer, and I have been thinking....I realized that I went off sugar last year on Easter and skipped out on all the Easter goodies. = ) So, I decided to go back on sugar as I didn't want to miss out again.
This past week (before I decided to stop my fast,) I made some cupcakes. I had the itch for awhile to make a fancy cupcake and I finally did it!
I made a vanilla cupcake with a fudge/cream cheese filling, topped with a strawberry meringue frosting. Oh boy were they good!
I made the combination up so I gathered the recipes together and started baking, hoping, and pretty confident, that they would turn out. I took pictures along the way, so you get a pretty good idea on how to make them but it is not step by step.

First, I made the meringue frosting as I had never made it before. It turned out fabulous and was sooo easy! You all should try it sometime!
Next I put all the dry ingredients together....Butter was not part of that. It's wet.... = )

Then fill your cupcake tins with cups and start filling!
Then do that for all the rest!
Into the oven for about 15 minutes. Then run around the kitchen and get everything ready for when they come out.....meaning, make sure there is somewhere to put them, have your cooling rack out and the next batch ready to go in.
Next batch is almost ready!
First batch is out and looking good! Remember that you need to take the cupcakes out of the pan right away! Other wise you will have soggy cupcakes.....yuk!
Right onto the cooling rack, that you should have gotten ready while they were baking....
Next, as you are waiting for the muffins to cool, get some strawberries. They can be fresh or frozen. If frozen thaw them in the microwave. (That's what I did.)
Cut them up and then mush them a tiny bit...
Get your bowl of meringue frosting that you made earlier, and fold them together slowly. Do not put too many strawberries in the frosting. Kinda eye ball it, so that there is an even amount of strawberries throughout but not so that they are taking over.

Once your frosting is all made and your cupcakes are cooled, put a decorating tip in a pastry bag or a Ziplock bag and then fill it with frosting.
Then......frost away! I posted several pictures below.

Fudge/cream cheese filling
If you want to make these, I will be putting up the recipes on my bakery page. In the end though, I found the cupcake recipe that I used to be really dense and dry. They were delicious the first day, but they weren't good after that. So, the recipe that I will put up won't be the same one I used.
You really can use any recipe that you have for the cupcakes. Even a box mix. Just follow the directions and go from there.
Did I eat a cupcake in the end?? Yes. I did. I went off of my sugar fast and OH, the sugar tasted so good! There's no doubt about it!
